Homemade Pizza Sauce (Perfect for Your Pepperoni Pizza Sourdough Bread)

This homemade pizza sauce is the secret behind the incredible flavor in my Pepperoni Pizza Sourdough Loaf. Instead of using only water, a portion of this rich, herb-infused sauce is mixed right into the dough, giving every bite that warm, savory, classic “pizza” taste. It’s quick to make, perfectly balanced, and transforms a simple loaf into the ultimate comfort bread.

Why This Pizza Sauce Works Perfectly in Sourdough

• It adds natural richness to the dough.
The acidity from the tomato sauce deepen the overall flavor, giving the loaf a true pizzeria-style taste without extra toppings.

• The herbs build flavor right into the crumb.
Oregano, basil, thyme, and garlic give the dough a savory, aromatic boost that permeates every layer of the bread.

• The consistency blends beautifully with sourdough hydration.
A little sauce in place of some water adds moisture, color, and a soft, tender crumb—while still keeping the dough strong enough to shape and bake evenly.

Homemade Pizza Sauce

This simple pizza sauce has been in my recipe binder for over 20 years, and I no longer know the original source — but it’s become a family staple, and I’m so excited to share it here!

Ingredients

  • 1 (15-ounce) can tomato sauce

  • ¼ cup water

  • 1 teaspoon sugar

  • ¼ teaspoon dried oregano

  • ¼ teaspoon dried basil leaves

  • ¼ teaspoon dried thyme

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt

  • ⅛ teaspoon ground black pepper

  • 1 bay leaf

  • Dash of onion powder

  • ½ teaspoon lemon juice

Instructions

  1. Add all ingredients to a saucepan and stir to combine.

  2. Warm over medium heat until the sauce reaches a light boil.

  3. Reduce heat and simmer for at least 30 minutes, stirring occasionally, until the flavors deepen and the sauce slightly thickens.

  4. Remove the bay leaf before using.
