Sourdough Savory Star (Garlic Cheddar Bread)
Ingredients
Dough
2¼ cups white Kamut flour or 2½ cups organic all-purpose flour
2 Tbsp sugar
1 tsp baking powder
½ tsp baking soda
1 tsp French gray coarse salt
½ cup soft butter
1 cup milk
½ cup sourdough discard
Savory Filling
Soft butter (for spreading)
Roasted garlic, finely chopped (to taste)
Fresh parsley, finely chopped
1–2 cups sharp cheddar cheese, freshly grated
Finish
Salted butter, melted or very soft (for brushing)
Instructions
1. Mix Dry Ingredients
Using a stand mixer fitted with a dough hook, add all dry ingredients and mix briefly to combine.
2. Cut in Butter
Add softened butter and mix on low speed until crumbly and evenly incorporated.

3. Add Milk & Discard
Add milk and sourdough discard.
Mix on low speed for 4 minutes, until a soft, cohesive dough forms.
Add a small amount of flour if needed.

4. Bulk Ferment
Place dough in a covered bowl and let rise on the counter for 2–4 hours, until slightly puffy.

5. Divide & Roll
Divide dough into 3 equal sections.
Roll each into an 8–9 inch circle on parchment paper.
6. Fill the Layers
Place the first dough circle on parchment.
Spread a thin layer of butter.
Sprinkle with roasted garlic, parsley, and cheddar.
Add the second dough circle and repeat filling.
Top with the third dough circle.
7. Shape the Savory Star
Place a gold band canning ring (or similar-sized cup) in the center.
Cut into 4 sections, then cut each section into 4 more, creating 16 strips.
Twist two strips in opposite directions 2–3 times and pinch the ends together.
Repeat around the star.
8. Bake
Preheat oven to 350°F.
When finished twisting the strips together, pick up the corners of the parchment paper under it and place into a large cast iron skillet.
Bake for 40 minutes, until golden and baked through.
9. Finish
Remove from oven and immediately brush the top with salted butter.
Cool slightly before serving.
